First up: aubergine bake

Start time: 6pm, Sunday 19 April

I thought we should start with something straighforward, and have gone with a vegetarian dish so as to be as inclusive as possible. It serves four so us single people can get four meals out of it (providing we remember to freeze it).

Also, you might notice that this post is filed under the category of ‘recipes’ and yet contains no actual recipe. Well, telling you the recipe before the event would defeat the object; but the recipe will go in here eventually.

Ingredients

Serves 4

  • 2 large tomatoes
  • 1 aubergine
  • 1 large onion
  • cheese
  • small carton of plain yoghurt
  • breadcrumbs
  • chopped basil or oregano (fresh or dried)

  1. If I had read this yesterday I would have bought a bag of breadcrumbs in Loaf bakery, Woodbridge Road, Moseley (formerly Lukers). Only place I know that actually sells the things!
